Creamy Chicken
This is actually the filling of Chicken Pastel but im just too lazy to make the crust and unfortunately frozen pie crust is not available in this part of the country. And besides I like it better with rice.
Ingredients:
1 kilo chicken breasts (3 medium size) deboned and cubed
1 large carrot cubed (same size as the chicken)
3 medium sized potatoes
1 can whole button mushrooms cut into half
1 bar quickmelt cheese shredded or cut into smaller pieces
1 can chorizo bilbao sliced diagonally (dont throw away the fat that comes along with it)
1 medium sized onions
2 knorr chicken cubes
1/4 cup all purpose flour dissolved in 1/4 cup water
1/4 bar butter
2 cups water
salt and pepper to taste
How to do it:
1. Melt the fat that comes with the chorizo bilbao in a large pan or wok. Add the butter.
2. Saute onion until transluscent.
3. Add chicken and saute until light brown in color. Add the mushroom.
4. Add 2 cups water and put knorr chicken cubes until it melts.
5. Add the potatoes and carrots and simmer until they soften. Dont overcook them though.
6. Add the quickmelt cheese until it melts.
7. Add the dissolved all purpose flour to make the dish creamy sans the cream (you have enough fat from the butter and from the chorizo bilbao)
8. Add salt and pepper to taste.
