Lord of the ONION RINGS!

Here's my version of a favorite snack - ONION RINGS.  Others might ask why bother to make onion rings when you can buy them in fastfoods.  Well, number 1, there's no Burger King in this part of the country.  Number 2, i was so dissapointed with the onion rings at Mooon Cafe.  It was oily. It was soggy.  It was just.... so unappetizing.  And lastly, making my own onion ring would save me a lot! For a 25php white onion, you can feed 6 - 8 people.

Onion Rings with Mayo and Catsup Dip

Ingredients:
2 large white onions
2 eggs beaten
1 cup evaporated milk
all purpose flour
bread crumbs -- ideally, you use the brown fine bread crumbs.  but if its now available, the japanese breadcrumbs will do. just put it in a food processor to grind it into fine powder.
salt and pepper to taste

How to do it:
1.  Slice the onions into 1/8 inch rings -- well it really depends on how thick you want your onion rings to be.
2.  Stir in 2 beaten eggs in 1 cup evaporated milk.  Mix thoroughly.
3.  Soak the onion rings into the egg and milk mixture.
4.  Dip the soaked onion rings into the all purpose flour.  Refrigerate for at least an hour.  This will help the flour stick to the onions.
5.  Season the bread crumbs with salt and pepper.
6.  Soak again the onions in the egg and milk mixture.
7.  Dip the soaked onions in the prepared bread crumbs.
8.  Deep fry until golden brown
9.  Serve with mayo and/or catsup. 
10.  ENJOY!
